Hello There! I've been busy for the past weekend, its Easter and my grandma's birthday! My mom's, mom is turning 72 and I make this cake for her but my mom told me that she like chocolate cake and I said to her I want to make a carrot cake cause its been a long time since I baked a carrot cake. She agreed but she said that I have to make a chocolate cupcake, so I did! I forgot to take a picture of it cause I'm in a hurry to make these cakes. Thank Goodness that I found a recipe that so easy and I noticed that its really that simple to make. No fuss at all! And I'm impressed. Since I don't have a mixer cause I accidentally broke it. Yeah I know we can be clumsy sometimes or just out of luck I guess. Anyway back to the cake, I make a 7 by 7 inch round pan for the carrot cake and its a two layer cake with butter-cream frosting and carrots all around it. I didn't use cream cheese for the frosting cause its quite expensive here that's why I don't bake cheese cake or has anything to do with cream cheese I just buy some ready made bake products that has a cream cheese in it. The chocolate cake that I made is the same frosting as the carrot cake but the filling of it is a chocolate fudge and its heavenly. Everytime I make a chocolate fudge and if there's a left over you know that we do? We make it as a chocolate spread! Oh yes! Its that good!
This is the chocolate cake that I've been talking, its pink cause its for my sister for her late birthday celebration. And yes, its got a marshmallow on top cause I'm too lazy to make it a fondant cake and I'm in a hurry so I just put a pack of small marshmallow on top. It turned out so cute especially the color of it. I just make a simple pipping on the sides of the cake, I used the open star tip cause its my favorite tip and second I'm not an expert on pipping icing's, I tried my best at pipping and this is the only pipping technique that I know. I always wanted to try the rose pipping technique but its out of my league. Hahahahaha Well, I hope you like my simple cakes. 'till next time!
