Cinnamon and Raisin Buns

Hello There! You probably don't know that I know how to bake some certain cakes and breads and in times that I've been craving to use my oven I bake! Yes, I crave to use my oven. Then I sit down and look for something to bake at the internet and I found out that I want to make a not particular bread. Since its a holy week the hot cross buns are one of the famous to do for bakers. I look for the recipe of it and end up at the pioneer women website but then it came to my mind that I can't use my mixer cause its broken and I'm too lazy to look for someone who can fix it up so I just call it my cinnamon and raisin buns because I can't do a frosting without my mixer, its tiring really, to make a frosting by hand! I bought the ingredients that are needed and when I came home I start the action! And oh sorry if I don't have a proper order on how I make it cause I can't take a picture if my hands are full of dough.

combine 2 cups milk, 1/2 cup oil, 1/2 cup sugar in a saucepan and lightly heat it up until the sugar is dissolve. Don't boil it! Leave it to cool for 5-10 minutes until it is warm to the touch. Then sprinkle 2 1/4 tsp of yeast over the mixture and leave it for a few seconds. Sift 4 cups all purpose flour and stir to combine I use my hands on these so its easier to combine. It's actually a sticky mixture but they say the wetter the better. Cover it with a damp tea towel or cloth and leave it for an hour.

After an hour it will double in size and you have to add 1/2 cups of flour, 1/2 tsp of baking powder and soda and 1 tsp of cinnamon. Well, I love cinnamon on breads so I add about 1 tbsp of cinnamon then combine it all with a 1 cup of raisins, you can add nuts too but I have no nuts in hand so I just stick to what I have.  Oh! I use an ice cream scoop for these one just make sure that you floured your hands and your work surface before forming them into balls so they don't stick. Roll it into a ball and turn the edges under it and place on a greased baking tray, cover them again with damp tea towels, leave them in a warm place, I like to put mine in top of an oven for about 30 minutes until they doubled in size again. Then preheat your oven to 400 degrees and make your egg wash just beat an egg.

After they risen up don't forget to egg wash them, and I use cinnamon sugar for topping after I put an egg wash cause I love cinnamon! And ofcourse bake them baby! 20 minutes until golden brown.

And here they are my cinnamon and raisins buns! They are perfect to eat after you bake them with a coffee its perfect for an afternoon snack. For the frosting I just whip a powdered sugar and dash of water and spread it at the top when they are already been cooled.

Tadah! There you go. Let's eat! Hope you enjoy.

XOXO
